Not sure if this is a carb problem or not. Rejetted my carbs after
installing V & H Cruzers and a Hypercharger. Backed out the PMS screw 1
1/2 turns, installed a 122.5 main jet and a 35 pilot jet. Starts great,
idles fine and runs great around town. Only problem is once I get to
about 60, the engine sputters unless I am accelerating or decelerating.
Anyone got any ideas what might cause this?

Your settings are off. Put the stock pilots back in, and go to these 2
websites, they cover the HC on the 650 nicely:
